Beefburgers, roasted in the oven because my grill is broken and I didn’t want to fry them. Chilli pepper, garlic, a sweet pepper, an onion, all chopped up and sautéed. Then I added half a tin of tomatoes, some fresh basil and a stock cube. In the last four or five minutes I popped the store bought Yorkshire puddings into the oven to heat them through. I put the veg inside the puddings and put the burgers on top… The only thing missing? No mustard!
I really want to make another apple cake but I keep getting distracted. I have paintings to take to a gallery who are going to try to sell them on line for me. I have to get my cats flea treatments from the vets. I have online lectures to attend. I don’t know how much longer the apples will last. Yesterday I used a large one to make apple sauce. I added cider instead of water and cooked the fruit slowly over a low heat v gradually mashing down the apples. Delicious with cream.
I wanted breakfast but we have no milk or eggs, so I had a rummage in the fridge. I found corned beef, cheddar cheese and some pickled beetroot. I toasted a couple of slices of brown bread then buttered it. Placed a slice of corned beef on both slices (I could have done just one and made a sandwich but I was hungry) added cheddar cheese and microwaved it till the cheese had melted. Then added the beetroot to spice it up a bit. I have to say I enjoyed it. Probably far too much fat, but sometimes you have to go for it. Other options would be cheese and tomatoes (if I had any) melted onto the bread then a topping of beetroot or even advocado?
Well he is around, and he did come in and eat earlier on, but despite it blowing a gale he doesn’t seem to want to come in. I think becausemy hubby has dragged him in a few times so he has decided he might be trapped inside (this despite spending two hours on the settee last night). I guess he knows his own mind, he yowls loudly to get out once he’s in and the door is shut… We will make progress I’m sure. But on his terms, not ours.

Then, a large Christmas cake, Christmas pudding, mint chocolate matchsticks, grapes, iced buns, a chocolate toffee apple, clementines, bananas, two pomegranates, dried cranberries, two jars of honey, a pot of jam. He also got himself four bottles of beer and four cans of sweat cider.
I’m diabetic, so I can’t eat any of these and can’t really drink much alcohol. My sarcasm gene kicked in so I told him he was being ‘sweet’, I said he should get me some honey roasted ham or some duck in orange sauce. After I washed the shopping and put it away I asked him how much he had spent. I guess 90% of what he bought is for him.
I just decide to add a couple of medium chillies to my curry. I remembered to deseed them and chop them up finely. Put them in the curry and then finely diced an onion…. Oops I’d forgotten to rince my hands, now they are burning! Note to self, rinse or ouch!
It’s starting, the transformation. Our outdoor cat is coming in for meals, sniffing noses with the other cats. He then yowls to be let out. But at least he can get warm if he wants. The others, indoor cats, are tolerating him. I think they need to start going out but I’m worried they will get lost. It all takes time.
In fact the outdoor cat has started rubbing round my legs and accepting a head scratch. He’s off again now, put into the night, but he had a shed he can sleep in. A cat bed, and an old jacket for warmth.
Take the two croissants, cut them in half horizontally. Slice a banana in half lengthways. Place one half in each croissant. Sprinkle with a little sugar or sweetner. Dollop the thick cream on top of the banana, then place the top of the croissant back on top. Serve as it is or with a few raspberries on the plate. Tasty and easy.
Serves two.
Youcan substitute whipping cream or squirty cream if you want. X
A little bit flat, but I cooked this in a flan case.
Ingredients (approx amounts)
8oz self raising flour
4oz butter/ margarine
two tablespoonfuls sweetener (or 4oz sugar)
three eggs
two tablespoons milk
pinch of salt
large cooking apple peeled and cored
packet of raspberries.
I put the self raising flour in a bowl and then put bits of butter in plus the sweetener, then with a metal spoon I broke the fat up more, a pinch of salt, then crumbled the mix between my fingers so that it looked like breadcrumbs.
I made a dip in the mix and added the eggs, slowly stirring it in and trying to keep air in the batter, I added a bit of semi-skimmed milk to soften it more.
I added the apple slices and the raspberries to the cake batter so the fruit was evenly mixed into it. Then I poured the batter into the flan case which I had buttered.
I put the cake in an oven, gas mark 4, for 1 hour and 10 to 15 minutes.
It came out nice and moist, and it wasn’t completely cooled when we tore into it!
Note I used self raising flour that contains wheat, milk and eggs that can be allergens, butter which may not be in your diet and sweetener that you can cook with because I try to make sugar free cakes.
My paws are cold, turn on the heating hooman. Miaow, where’s my food? Little questions or demands they make. Insisting they are served. Hooman you have no choice, you are in my power. Now play with me, no I want to curl up and sleep, oh I’ve changed my mind, I want to go out.
Hooman, you should know I don’t eat THAT food. It is not special enough. Give me more of the rich tasty stuff.
