Purple rice

Tea tonight

Some mixed veg and rice with sausages.

I had some courgette, onion and red cabbage to cook so I added in a handful of rice into a pan of boiling water. I let that simmer while the sausages cooked in my air fryer. I knew that red cabbage releases colour into the water but I wasn’t quite expecting purple/blue to dye the rice.

It was a little bland but I added some brown sauce to liven things up a bit! Tasty

Toad in the hole from scratch

I followed BBC Good housekeeping magazines recipe for this. Vegetarians and vegans forgive me, you could use vegetarian sausages, but the batter needed eggs….

I used seven frozen sausages

2 eggs

1 small onion, sliced

Accompanying vegetables, potato, carrot and broccoli.

140 grams of self raising flour (I didn’t check which sort I needed)

Milk to add to the batter mix.

I oiled a dish and baked the sausages with some sliced onion for twenty minutes. In the meantime I put the flour in a bowl, made a dent in it and added the eggs stirring with a fork till it was all mixed together. Then I slowly poured in and mixed milk into the batter so it was like thick double cream.

I poured the batter over the part cooked sausages, and returned them to the oven on gas mark 8 because my cooker does not get very hot. I checked them over the next twenty minutes but I still managed to burn the batter a bit. I also think I should have added more milk so that it would have been moister. I chopped the vegetables up small so I boiled them on the hob for twenty minutes. Finally I added gravy granules to some of the vegetable water to pour over the meal.

I’ve never made this before, but it was something my mother made for our evening meals. I’m glad I tried. I will try and remember to make this again.

Bang!

I was cooking an evening meal and decided to open a bottle of rosé brut wine to go with it. It was very warm in the kitchen, but I didn’t think much about it as I took the wine out of the fridge. I peeled off the foil round the neck and loosened the wire around the cork. Then I had to check the food, stir it, add herbs. Suddenly…

BANG!

The cork had come flying out of the bottle, wine started to bubble out of the bottle all over the kitchen counter. I had to mop it up. I think about a quarter of the bottle was gone! It just shows how hot it was. Next time the wine is staying in the fridge till the food is ready!

Thai food

We went to Sawadee Thai taste restaurant in Stoke tonight as the owner, Apple, has just come back from Thailand.

The food was good, with friendly service and it was not too expensive despite all the increases in the cost of living at the moment. It’s amazing how food from different cultures tastes. I think it’s down to the different spices ot amounts of spice each culture uses. I like mild curry and sticky rice.

So if you happen to be in the area and like Thai food why not try it out?

Fishcakes

Evening meal. I decided to eat some fishcakes made of haddock and mashed potatoes in breadcrumbs. But what to have with them? I raided the fridge and chopped up two small tomatoes, some cucumber, a bit of hummus that is going out of date and a bit of brie that I let melt on top of the fishcakes. I’m not sure how healthy it was but it was certainly tasty. I wish I’d got some lettuce and some spring onions to go with it. I could have had a hunk of bread but decided against it. Does this count as a balanced meal?

Food

I just made a very nice curry with bombay potatoes, raita, mixed garlicy vegetables and chicken.

I was using one of the meal boxes that get delivered by post. My friend have it me because she had already got food in and she decided she didn’t need it.

Unfortunately I didn’t take a photo, by the time I had eaten it I realised it was too late. I added extra vegetables (courgette and fresh tomatoes) to bulk it out a bit, I’m trying to add vegetables to our meals to make them healthier. I don’t know if I would ever order a food box myself, I don’t know how much it cost as it was a gift. The meal was very tasty, but I added extra garlic and turmeric.

What to cook for tea?

Beefburgers, roasted in the oven because my grill is broken and I didn’t want to fry them. Chilli pepper, garlic, a sweet pepper, an onion, all chopped up and sautéed. Then I added half a tin of tomatoes, some fresh basil and a stock cube. In the last four or five minutes I popped the store bought Yorkshire puddings into the oven to heat them through. I put the veg inside the puddings and put the burgers on top… The only thing missing? No mustard!

It did remind me of the Monty Pythons Flying Circus sketch about a man asking what he can order in a cafe and the list goes from egg and chips through various permutations to spam egg and chips, spam egg and beans u to and including ‘spam, spam, spam, spam, spam, spam…… And spam’.

I howl with laughter when I see it.

I can remember being sent to the shops by my mum and saying ‘plumrose chopped ham with pork’ over and over so I would remember the convoluted name. I know it was before I was seven. I’m sure it was after we got a black and white TV. I can remember seeing adverts for it. Perhaps I have got the two mixed up…..

Mega Giga meals

This is not a criticism of a particular place and I have not used an image of a menu as it will be copyright.

But… We live in an age of excess for some and austerity for others.

I was looking for something I really liked on the menu and I spotted a mega meal of a full rack of pork ribs, a huge portion of chips, two corn on the cob and coleslaw and baked beans. But here is the but…. That is far too much for me. I could have shared with my hubby, but he doesn’t like ribs. So I thought I would ask for half of it. The mega meal was almost £16, so I hoped I could get something for £8. The answer? NO. But I said, there’s no way I can eat that. I want to eat less. Well, came back the answer, just eat what you want, or take the rest home for later!?

Huh, but I won’t eat it and I don’t want to take it home for later…..

Well we are sorry, but the half rack of ribs was taken off this menu….

I paused to think about this. Anyone without a huge appetite cannot have ribs, there is no other option. If you buy it then you are paying double the usual price. Its promoting greed and spending too much on a limited budget.

I had to choose something so I had a cheese burger in a brioche bun. It was adequate but dry, and the French fries were dry too. I smothered everything in ketchup and mayo to try and make it a bit more edible. I left half the bin, but I was not happy. I think they have lost a customer.

I usually cook food for both of us. I buy in ingredients and then cook in the late evening. But tonight he doesn’t want food. He’s happy with a sandwich. I can’t think of what to have for my meal. The stuff I’ve got in the fridge are things like tandoori paste and nan bread and basmati rice, but if I eat that there won’t be enough for both of us tomorrow. Then there are wheat biscuits, a cereal, but that’s breakfast food. There is one banana, I might have that and some custard. I might even add a bit of cocoa to cheer it up…. Yes I fancy that. I will use sweetener to keep the sugar levels down..

Weird talking about eating food rather than making up recipes. Anyway I guess I’m hungry.
