Tonight’s tea. I decided to have a mushroom omelette (closed cup mushrooms fried in a little oil, then a spot of milk and two eggs). Cooked until the omelette was firm.
The salad was salad leaves with grated carrot and red pepper, a few sliced cherry tomatoes, a sliced radish, a few slices of cucumber, a few sliced garlic stuffed olives, half an avocado, and finally a bit of light mayonnaise.
I just wanted to make something for tea and I had a small pork pie to use up. I decided to put a small salad together.
We had a couple of very ripe plums in the fruit bowl so I chopped them up. To this I added a large tomato and some cucumber also chopped.
I have new jars of silvers skin pickled onions and baby gherkins. I really struggle to get the lids off. I saw online a way of releasing them. You tap the side edge of the lid with a wooden spoon. Tap and turn the jar until you hear air suck into the jar with a pop! It actually works, just don’t bash to hard!
So I added sliced gherkin and little pickled onions. Then I drizzled light mayonnaise over the top.
It was nice to eat a slightly sweet salad with natural fruit instead of sweetened pickled onions which I really don’t like.
Not something I’ve done for years. But a picnic on a sandy beach was fun. Luckily it was a still day so the sand didn’t get blown into the sandwiches! Salad was tasty with olives, lettuce, cucumber and tomatoes. A drink of tonic water and orange juice mixed was very refreshing. It was great to use a real picnic basket. I think we will do it again.
Evening meal. I decided to eat some fishcakes made of haddock and mashed potatoes in breadcrumbs. But what to have with them? I raided the fridge and chopped up two small tomatoes, some cucumber, a bit of hummus that is going out of date and a bit of brie that I let melt on top of the fishcakes. I’m not sure how healthy it was but it was certainly tasty. I wish I’d got some lettuce and some spring onions to go with it. I could have had a hunk of bread but decided against it. Does this count as a balanced meal?
Just made a salad dressing with an eighth of a teaspoon of easy Chilli, a level tablespoon full of oil (sunflower) and the same of brown sauce plus a twist of rock salt Mixed up together then added to shredded lettuce, diced onion and tomato, grated celery and cucumber.
I grate the cucumber and celery to make it easier to mix into the salad, it means everything is evenly coated with the dressing. It was nice and tasty and not too hot. I think the word is piquant.
Tea, (early evening meal). Cornish pasty. Mixed salad of lettuce, tomato, cucumber, onion, sliced mushroom, baby bell peppers and a bit of dijon mustard and light mayonnaise. On a Portmeirion dinner plate. I think it was a good balance of food groups. Trying to cut down on carbohydrates and fats a bit. Colour on a plate.
My cat on top of the microwave, despite putting stuff on it to try and keep him off, and a cucumber it courgette growing in the kitchen window ledge. It’s like a greenhouse in there. Grown from a random seed planted a couple of months ago. I saw the flower yesterday and it was open this morning! The cat behind it is a metal doorstop, I put it there agas ago and liked it so left it there.
We planted lots of cucumber and squash plants this year. But this was all I managed to grow.
It’s about 7 or 8 centimetres long and curled round with a thin stalk end and a bulbous end where the initial flower grew.
What to do? It’s come loose from the stem so it’s now in the fridge. I’m going to peel off the rough bits and chop it up finely. I might add it to some spicy tomato chutney I’ve got in. Then I will add that as an accompaniment to some cheese sandwiches on fresh brown bread. I hope that is a suitable use of my little friend.
