Purple rice

Tea tonight

Some mixed veg and rice with sausages.

I had some courgette, onion and red cabbage to cook so I added in a handful of rice into a pan of boiling water. I let that simmer while the sausages cooked in my air fryer. I knew that red cabbage releases colour into the water but I wasn’t quite expecting purple/blue to dye the rice.

It was a little bland but I added some brown sauce to liven things up a bit! Tasty

Cooking!

Just managed to cook! A simple recipe, two carrots chopped, half an aubergine chopped up, half a courgette (zucchini). I set a pan of basmati rice boiling while I put a couple of chicken breasts in another pan and fried them. Then I added the vegetables, added a large flat mushroom, added salt, oregano, and garlic granules. When the chicken was part cooked I cut it up into small chunks. I had some cooked mussels out of the fridge that had defrosted overnight, I added them to the food.

Then I deseeded a single chilli and added that, I spooned cooked rice into the pan and added half a tin of peeled plum tomatoes. In all everything cooked on a low heat for about half am hour.

Did I mention? I stood up to do it, put my crutches to one side. I felt a bit unbalanced, but I’ve got to try and do things. And the meal was lovely. Hubby carried the plates into the living room for me.

Food

I just made a very nice curry with bombay potatoes, raita, mixed garlicy vegetables and chicken.

I was using one of the meal boxes that get delivered by post. My friend have it me because she had already got food in and she decided she didn’t need it.

Unfortunately I didn’t take a photo, by the time I had eaten it I realised it was too late. I added extra vegetables (courgette and fresh tomatoes) to bulk it out a bit, I’m trying to add vegetables to our meals to make them healthier. I don’t know if I would ever order a food box myself, I don’t know how much it cost as it was a gift. The meal was very tasty, but I added extra garlic and turmeric.

Second hand curry

Well not second hand, but with left-over ingredients. I made this using curry powder and turmeric. I diced up some courgette, onion, broccoli, and aubergine. I then added a tin of tomatoes. I added water to it to stop it burning on and to add moisture. I also added a few lentils. The fish was bought today. It doesn’t really matter what sort, but a white fish isn’t too strongly flavoured. I’d added it later as you don’t need to overcook fish. It flaked nicely as I cooked and turned a nice golden brown. Much nicer than using a jar of curry sauce.

Using courgette in curry

I decided to use courgette (zucchini) in a curry, but hubby doesn’t like it sliced. So I decided to grate it up. I put the meat (I could have used quorn) in first. Sealing diced pieces over a hot heat. Then I added the courgette and lowered the heat. I added stir fry vegetables a couple of minutes later. I also added half a tin of baked beans because I’d decided not to use any noodles. Finally I added a sachet of katsu curry sauce. It might not be the right recipe, it might not taste exactly right but it was OK.

At last, a courgette!

My vegetables didn’t do well this year. It sort of fizzled out in August and nothing grew much apart from the pears. But I spotted this growing last week. The weather is due to get cold in the next day or so but I hope if I give it a lot of water and some feed it might grow a bit more before the frost gets the plant. There are more flowers on it.. I also found a few baby tomatoes in a hanging basket. Green, but maybe they will survive for a while.

Cat and Cucumber

My cat on top of the microwave, despite putting stuff on it to try and keep him off, and a cucumber it courgette growing in the kitchen window ledge. It’s like a greenhouse in there. Grown from a random seed planted a couple of months ago. I saw the flower yesterday and it was open this morning! The cat behind it is a metal doorstop, I put it there agas ago and liked it so left it there.

I think I must be content with chaos.

Cherry blossom

It’s been quite a dry and cold April so far so the cherry blossom in the garden has been a bit late coming out but as the weather is due to warm up over the next few days hopefully it will be ok. We are also clearing some of the ivy off the house. We are being careful but the tendrils had got under the weather boarding round the roof and was starting to pull it away.

Meanwhile there is blossom on a couple of self seeded plum trees. We need to cut back an old willow that is snagging on the roof of a neighbours garage and I’d like a limb cutting off from a laurel bush which is overshadowing the garden. The other straighter limb will stay and leave it as a dense tree because all the lower branches were cut off a few years ago.

The tomato and courgette seedlings are still inside because of the cold nights. I want to get them planted outside soon. Also we have a few sweet pea seedlings and morning glory plants.
